Lobsters live in warm ocean bottoms, hiding in crevices among rocks during the day and coming out to hunt at night. They are slow-moving and not particularly good swimmers. These creatures are mainly found in the East China Sea and South China Sea of our country, with the highest yields coming from Nan’ao Island in Guangdong Province. The peak fishing season for them is during the summer and autumn months.

Lobsters typically measure about 30 centimeters in length and weigh around 500 grams (with the largest reaching up to 5 kilograms). They have a robust, cylindrical body that is slightly flattened, and their color is olive with numerous small white spots. Their bodies are divided into two parts: the head-thorax and the abdomen: The head and thorax are well-developed, with a hard carapace covered in spines. Two pairs of antennae are present, with the second pair being particularly long. The five pairs of legs on the head and thorax are also well-developed; when extended, the antennae and legs resemble those of dragons in mythology, which is how it got its name. The abdomen is relatively short, and the five pairs of swimming legs have largely degenerated. The tail is equipped with caudal appendages.

Lobsters belong to the phylum Arthropoda, class Crustacea, order Decapoda, and family Limulidae. They are large in size, rich in meat, and highly nutritious, making them a prized aquatic product. When people consume lobsters at home, they usually steam or boil them first, then shell them and eat the meat, dipping it in seasonings like ginger vinegar.
